Vegan Breakfast: Banana Acai Smoothie


I've mentioned before in this previous post about how much I love the Sambazon brand and their drinks. Below is another smoothie recipe using my fave organic super food, Acai (pronounced ah-sigh-ee). I am in love with this lil' high-energy berry. It's full of antioxidants, amino acids and essential fatty acids.


Ingredients:

-2 cups of Sambazon Acai Juice

-4 scoops of Arbonne Chocolate Protein
(No Arbonne? Substitute soy or rice protein)

-1 cup almond milk (if you substituted rice/soy protein substitute chocolate almond milk)

-1 cup ice

-2 large bananas

Directions:

Blend and enjoy!

Vegan Snack: Edamame


It's so simple to make and good for you. Edamame is packed with protein (10 grams in fact) contains no cholesterol, very little sodium and is only 120 calories per 2/3 cup serving.

I recommend purchasing the cascadian farms organic brand. I'm OBSESSED with the cereals they make because they are an excellent source of fiber and whole grains. Also check out their frozen fruits which are perfect for smoothies.

For edamame in the microwave simply fill a dish with 3 cups of water and the bag of frozen soy beans. Heat for 3 to 3 1/2 minutes, drain the water and you're done!

Vegan Breakfast: Spinach Chocolate Smoothie


Oh how I love my protein shake in the morning! It's so convenient to put it all in a blender and be ready to hit the road.

Here's another recipe for you...tons of spinach will add calcium, fiber and protein to your daily diet so load up! This recipe has 25 grams of protein total.


Ingredients:

-2 scoops of Arbonne chocolate protein powder (don't have Arbonne? Use rice or soy protein instead)

-1 1/2 cups of almond milk (if you used the rice or soy protein substitute chocolate almond milk)

-1 cup ice

-1/2 cup of distilled water (add more if it seems too thick)

-2 handfuls of spinach

-1 large banana

Directions:

Blend all together (pulse first to crush the ice) and it's ready!

Don't have a blender purchased yet? I use the affordable Ninja Black Professional Blender - NJ600. It works well and gets the job done.

Vegan Side: Apple-Carrot Slaw w/ Toasted Coconut





Good morning all! It's finally Friday and the weekend is almost here! I've been absolutely exhausted this week (you'll soon find out why) so dinner had to be something simple.

This took about 10 minutes total to make so it was perfect. A big thank you to Shape Magazine for the recipe! It's located in the most recent issue with Brooke Burke on the cover (side note: she looks amazing!).



Let's compare the differences...what do you think? Not bad right?






I didn't make too many changes to the recipe because I thought the instructions were easy to follow and the ingredients were simple:

-1/4 cup sweetened coconut flakes

-1/2 tsp cumin powder

-1 1/2 tsp lemon juice

-1/4 tsp salt, more if needed to taste

-pinch cayenne pepper

-2 tbsp organic extra virgin olive oil



-3 large apples, cored, quartered and thinly sliced (don't cut the apples until everything else is done or they will brown...I learned this the hard way)

-1/2 pound carrots (about 2 cups)

-1 tbsp chopped chives

-1 tbsp parsley

Directions:

1. Heat a large skillet over med-high heat (don't add anything)

2. Add the coconut and toast for 3 to 5 minutes then remove and set aside

3. Add lemon juice, salt, cayenne and oil to a large bowl and stir

4. Prepare the apples (aren't you glad I warned you?)

5. Combine all ingredients to the large bowl, toss and serve immediately

Thirsty Vegan: Sambazon Drinks



Yum! Needed a pick me up today and I'm loving these little 10.5oz bottles of goodness.

Both are organic and I tried 2 different flavors-

1. The Energy Blend: Acai Berry + Yerba Mate + Guarana 


This one is more of a juice and includes 50mg of natural caffeine per bottle. Avoiding coffee? This is the way to go. Since it's organic there's no artificial coloring or harsh dies. Organic vegetables and fruit juices such as fair trade Acai puree, filtered Acai juice, filtered water, apple juice, cane sugar, Guarana extract and Yerba mate are what contribute to the natural coloring and delicious taste.

2. The Protein Blend: Acai Berry + Chocolate


This one is more of a smoothie and has 8 grams of Vegan protein sourced from chocolate soy milk and hemp protein. It's an excellent source of Omegas 3, 6 and 9 which help to keep you feeling fuller longer. It even includes 5 grams of fiber (from the hemp). The label states it contains over 120 acai berries in just one 10.5 bottle. Love!
