Our Big Announcement: Vegan...and Pregnant!


So here's our lovely story of how it all started...a couple of months ago Hubs and I sat down and had "the talk" where we decided "it was time". Aside from our wedding day this was going to be the most exciting time in our lives and we wanted to plan. A few weeks went by and I went a little stir crazy...taking a test every week so I could find out RIGHT away. I had to have a talk with my crazy self, "ok you need to chill out...take a breather and stop obsessing". So I did...hubs and I went to Austin, TX to visit his parents for Labor Day. We layed by the pool, went out to eat and just enjoyed our time with family. It was nice.

So a couple of days went by..you'll notice in one of my previous posts I wrote about my first cooking class on September 5th in front of a sold out room. It was such a great day and I kept having this feeling. I've heard people talk about it but never felt it to that day. Then I thought "oh wow I'm late and it's been over 30 days since my last cycle". I came home, told my hubs and proceeded to the bathroom where I was keeping quite a  stash of prego tests (don't judge me). A positive sign showed up almost immediately...and we were both there to share the moment. I took only two weeks off of obsessing and it happened. My mom was right! They always are, aren't they?

Ok so it's September 5th and we're pregnant. Now what? Keep in mind this is something I've always wanted but I have absolutely no idea what I'm doing. My close friends don't have kids, I haven't babysat since I was 13 and I don't know what half the stuff is throughout the baby isles of Target.

So...here goes nothing. The best part? I'm sharing the details with all of you throughout my journey to mommy hood. I'll be posting photos, tips, doctor visits, baby updates, my exercise plan and most importantly my diet plan and recipes.

Vegan Dinner: Veggie Lettuce Wraps


Happy Election Day! I hope everyone has voted. No matter who you choose your vote counts.

Today is also my hubs' bday. The big 2-9!! He is my best friend, my rock, my everything. How did I get so lucky?

So last week, November 1st, was National Vegan Day. In order to celebrate appropriately I made a clean, organic and all veggie dinner and added my homemade Honey Teriyaki Sauce. Take a look!

Ingredients:

-2 cups chopped broccoli

-2 cups chopped carrots

-2 cups broccoli slaw (see picture below)

-4 large shiitake mushrooms

-1 serving of my Honey Teriyaki Sauce

-bundle of Green leaf lettuce (for the wraps)

-sesame seeds for topping

-2 tbsp olive oil

Directions:

1. Heat extra virgin olive oil in a large skillet over medium high heat

2. Add all veggies, lower heat to just over medium, and cook 7 to 10 minutes until they start to soften a bit but are still crispy

3. Refer to honey teriyaki post in order to make the sauce

4. Serve veggies over green leaf lettuce, top with sauce and sesame seeds and you're done!
